The olives are processed with state-of-the-art continuous cycle equipment within the first 24/48 hours of delivery, ensuring maximum freshness and quality. Our cutting-edge mill allows us to control the temperatures of the machines, olives, and consequently, the final oil, preserving all its organoleptic characteristics.
The olive processing begins with defoliation and washing, using specialized machinery to remove impurities such as leaves, stones, and organic residues. This is followed by crushing, where a raw olive paste composed of skin, pulp, and pit is obtained.
The paste obtained then undergoes the malaxation phase, which aims to break the emulsion between water and oil. The oil extraction process ends in the decanter, where the separation of the oil from the water and pomace occurs. When your oil is ready, you will be contacted by us to come and collect it.
Storage and Bottling
For those who use the milling service, we also offer the option to store the oil in dedicated silos in our premises, awaiting subsequent packaging.

The oil storage and bottling service is exclusively available for oil derived from olives milled at our mill and stored in deposit at our premises.
